5 Minute Broccoli Salad

One of my favorite dishes from Sweet Tomatoes is Joan’s Broccoli Madness Salad. I always have to have this salad there or else it’s as if I never went to the restaurant at all! Anyway, I loved it so much that I wanted to make it myself! Here’s my version:

Ingredients:

2 heads raw broccoli
1/2 cup cashews
1/4 bacon bits
1/3 dried cranberries
1/4 chopped red onion
Pepper (optional)
Dressing:
1 cup mayonnaise
3 tablespoon brown sugar
2 tablespoon vinegar
Directions: 
Rinse the broccoli and pat them dry.  Combine all the ingredients in a large bowl except for the dressing. In a separate bowl, mix the mayonnaise, vinegar, and sugar. Stir it together until you have a smooth consistency. Add the dressing with the broccoli combination and toss until it is evenly blended. Chill the salad for about 30 minutes in the fridge, and enjoy!

  1. I've had this salad it's delicious. .. I love all the flavors together… I wish it had less calories but the mayonnaise is needed and unfortunately low fat mayo doesn't cut it xox
